Banana Bread Muffins and an Applesauce Recipe

Another oat flour recipe. Yeah, I see you rolling your eyes! I’m sooooorrrrryyyyy, but I still have quite a few to share.

This recipe calls for applesauce in place of any oil or fat in the batter. Applesauce makes for healthier muffins and baked goods in general without sacrificing moistness.

Banana Bread Muffins and an Applesauce

I’m starting with a simple recipe for applesauce. This recipe makes about 2 cups of applesauce.

Ingredients

Applesauce

  • 4 apples
  • 1/4 cup of honey
  • 1/2 teaspoon of cinnamon

Banana Bread Muffins

  • 2 cups oat flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 6 bananas
  • 1/2 cup apple sauce
  • 1/4 cup honey
  • 2 eggs, blended
  • 1 teaspoon of vinegar (any type)

Directions

Applesauce

  1. Peel, core, and slice the apples. Put the apples in a pot with the other ingredients. Add 1/2 cup of water, and simmer over low heat till the water is gone, about 20 minutes.
  2. Transfer extra soft apples to a blender or food processor and blend till smooth.
  3. Applesauce is very good for babies who’ve started eating regular foods, however, please leave out the honey when making this for babies, and reduce cinnamon to 1/16 teaspoon.

Banana Bread Muffins

  1. Preheat oven to 350.
  2. Sift together the flour, salt, and baking soda.
  3. Blend eggs, bananas, vinegar, honey and applesauce till smooth.
  4. Pour flour mixture into banana mixture and stir till just combined (if you over stir, you’ll get tough muffins).
  5. Pour batter into prepared muffin pans and bake for 25 minutes.

Love these muffins. I made them a second time without the additional honey, just the honey in the applesauce recipe (calorie watching tins). Still tasted divine. Thanks
