Beef and Plantain Medley

This recipe is soooo good, it doesn’t need a whole lot of intro, so here goes.

Beef and Plantain Medley

This serves 4


  • 400g of beef, cut into bite size pieces
  • 3 large ripe plantains (not too ripe), diced
  • 1 can of kidney beans (about 1 1/2 cups)
  • 1 can of tomatoes (4 large tomatoes, chopped)
  • 1 cup of coconut milk
  • 2 red bell peppers, chopped
  • 2 green bell peppers, chopped
  • 3 atarodo/scotch bonnet, chopped
  • 1 large red onion, sliced
  • 3 cloves of garlic, minced
  • 1 bay leaf
  • 3 tablespoons of olive oil
  • 1 stock cube
  • 2 teaspoons of salt, divided


Put meat in a pot. Add bay leaf, 1 teaspoon of salt, stock cube, atarodo, and 2 1/2 cups of water. Cook over medium heat for 10 minutes.

Add plantain chunks, and 1/2 teaspoon of salt. Cook till water is almost gone and plantains are done.

Heat olive oil in a wok. Add onions, garlic and bell peppers. Sauté for 3 minutes.

Add tomatoes and beans, and leave to cook down, about 5 minutes.

Add the plantains and meat, coconut milk, and remaining salt, simmer for 6 minutes.
