The only thing I’ll say about this recipe is this- double or triple the recipe if you live in an apartment complex of block of flats. The aroma while the goulash is cooking will certainly beckon on everyone within ‘smelling distance’, and it tastes even better than it smells.
300g of beef, chopped into small pieces
8 irish potatoes, cubed
2 large carrots, chopped
3 large tomatoes, chopped
2 tablespoons of blended atarodo (habanero)
1 medium red onion, chopped
1 inch piece of ginger, minced
4 cloves of garlic, minced
3 tablespoons of tomato paste
2 bay leaves
1/2 teaspoon of dried thyme
1 teaspoon of turmeric
1/2 teaspoon of oregano
1 teaspoon of paprika
1/2 teaspoon of ground coriander
2 stock cubes
1 1/2 teaspoons of salt (or to taste)
2 tablespoons of olive oil
Put oil in a wok over medium-high heat. Add onions, chopped tomatoes, garlic, and ginger. Sauteé for 4 minutes
Add the blended pepper and tomato paste, and cook for 2 minutes.
Add 4 cups of water, then add the beef, bay leaves, turmeric, thyme, oregano, salt, paprika, coriander, and stock cubes. Stir and cook for 10 minutes.
Add the potatoes and carrots. Stir and cook for another 10 minutes.
Serve hot, and enjoy!
