The Best Carving Knife for the Perfect Roast

Nothing better to have around the holidays than good carving knives. But don’t get me wrong, I know these aren’t easy to find or get! I have had some trouble finding one that is long-lasting, affordable and easy to use.

Today, I want to share some of the best carving knife reviews and which is the best carving knife itself. I’ll also let you know why buying a carving knife will save you lots of trouble that you may not have thought about before.

Let’s find out what works for you!

What is a Carving Knife?

As its name describes, the carving knife is simply a knife with a long blade that carves meats into slices. The knife is usually between 20 cm and 38 cm, or 8 and 15 inches. The blade of this knife is much thinner so that it cuts more precise slices.

Why Use a Carving Knife?

Unlike a chef’s knife, which is wider and has a longer blade, the carving knife is actually used only for that purpose: carving. This knife makes life easier by allowing you to carve into big meats or roasts, such as a whole turkey or ham leg.

Best carving knife

The blade of a carving knife must always be razor sharp so that there is minimal friction on the meat, allowing you to cut the meat cleanly and fast. While you could technically use another knife, like a chef’s knife, it will likely create more of a mess and perhaps tear the meat, unlike the sharp long, thin blade of the carving knife.

When to Use Your Carving Knife

By now you know that your carving knife will make life easier when cutting slices and will save the mess. You may also know that using a carving knife is best with certain types of meats. Here are some:

  • Turkey
  • Whole roasted chicken
  • Roast beef
  • Pork tenderloin
  • Leg of lamb
  • Flank steak

Your carving knife will probably come in a set. Usually you will get your knife and a carving fork. The carving fork is used to hold the meat steady while you cut the slices. This fork will also prevent you from accidentally cutting your hand when carving the meat.

How to Carve Your Meat

As to everything with cooking, preparing meals and serving, you need to plan time accordingly. When you want to carve your meat, most of the time, it is because you want to impress your guests or have a nice holiday meal.

If this is the case, then you want to follow some of these steps:

  • Give yourself time for stand time and carving.
  • Stand time will usually be between 10-20 minutes. It will be longer if you have larger meats such as roasts, turkeys or whole chickens. Stand time is ideal because it allows the meat to finish cooking and makes the carving process easier as well.
  • Place the meat on the table if you are planning on carving directly there. If not, place the meat on a large cutting board, and make sure you have where to hold it.
  • If you don’t have a cutting board large enough, use a regular one and place a baking sheet underneath it and the sheet will collect the juices.
  • Use your sharp carving knife and a carving fork to steady the meat.

Tip: You should try to remove poultry and meat at 5-10°F before the given final temperature.

Tips for Carving Different Meats

Here are some of the most common meats to carve and how you can do a better job at it:

  • Legs: whether it is pork, lamb, veal, or even venison, you should carve them all in the same manner.
  • Put the meaty side of the leg up and cut a shallow “V” shape on top starting from the middle. Carve slices from the “V” down and slice the rest of the meat horizontally.
  • If you have a ham leg, then you cut diagonal slices, starting from the knuckle end.
  • Rib of beef: place the rib on its side and make a 5cm or 2in cut along the rib. Next, stand the meat up, with the rib side down, and carve several slices. Repeat for the other side.
  • Poultry: chicken, duck, goose, and small turkeys are all carved the same way. Lay the bird on its side and cut under the thigh, lift the whole leg up with your carving fork. Then cut down the breast by going halfway across and through the shoulder, then cut around and remove the shoulder, wing, and long strip of breast in one piece.

If you’re more visual, there are various videos that can make your carving easier, especially if it’s all about the turkey these holidays.

Now it’s time to start thinking about what the best carving knife could be for you and how to find it.

  • Though the knife may seem short, the blade is thin and sharp, making it easy to carve through the meat. If you are looking to carve a large turkey or another big roast, this knife might be too small, but it is good for you to start with something like this before investing on another option.

Having a carving fork is always a good idea, but this one may be a little small as well. Also, it is important to note that this set is supposed to be hand-washed as it is very delicate.

  • This carving set comes with black Santoprene nonslip handles meant to provide more balance and comfort.

  • This is an independent organization, and even if it does not mean anything to you, it has certified that Mercer items are made safely and with higher quality.
  • Though the set is resistant to both cold and hot temperatures, it shouldn’t be washed in the dishwasher because the high temperature and detergent may deteriorate the handle. Wash this set with soap and warm water, you shouldn’t soak it in water for a long time and shouldn’t use chlorine bleach, as it may discolor the handle as well.
  • The knife on this 4-piece set is lightweight and easy to handle, but it may prove to be harder to use with bigger meats or roasts, as it doesn’t have a strong grip. The handles on this set are also less wide and they may prove to be less sturdy when you use them.

  • The carving knife set from Jamie Oliver comes with a knife and carving fork made of stainless steel, and have a curved shape to help handling and comfort.

  • While the two items will last a while, they will need resharpening pretty often. This set may be considered less professional and more for small roasts and meats.
  • If you want to use it with big birds and big meals, or if you’re looking for culinary professional quality, this may not be the best choice.
  • It’s also important to note that the Jamie Oliver line is a popular brand, but may not be the higher quality of others. You will be getting a good knife for everyday items, just not for a big carving set.

Let’s Get Carving!

After you read all these best carving knives reviews you will probably still be wondering what makes sense for you. I can tell you that in my opinion, the best carving knife is the Wusthof Classic 2-Piece Hollow-Ground Carving Set.

Why this one? I trust Wusthof, and have worked with this brand for a long time, but I also know it’s higher quality and will last a long long time if taken care of appropriately. This set may be a little more expensive but it’s worth the money. And don’t let the fact that it’s shorter discourage you, the fork does a great job and the blade is so sharp that it won't even matter.

Hi, my name is Chidinma. I’ve been happily married for 4+ years (actually almost 6 years now), and my husband and I have been trying to have our own children for almost all the time we’ve been married, with no success…yet. We haven’t lost hope (far from it), and we believe it will happen very soon.
