Cabbage Rolls

Tomato Sauce


10 large tomatoes
1 inch piece of ginger
1 double stock cube
3 atarodo (habanero)
1 small red onion
1 small tin of tomato puree
2 cloves of garlic


Blend everything with 2 cups of water. Simmer in a small pot over low heat for 15 minutes.

Cabbage Rolls


3 cups of tomato sauce
4 leaves of cabbage
1 cup of cooked brown rice
400g of ground chicken
1 atarodo (habanero), sliced
1 small red onion, chopped
1 teaspoon of cayenne pepper
1 double stock cube
1 tablespoon of coconut oil


Add coconut oil to a medium pot set over medium-high heat.

Add the onions and pepper, and sauteé for 2 minutes.

Add the ground chicken, cayenne and stock cube, stir to break up the meat.

Add the brown rice, stir to combine, cook for 2 minutes, and remove from heat. Add 2 tablespoons of tomato sauce and mix.

Put the cabbage in boiling water, and set aside for 2 minutes. Remove and put in cold water to stop the cooking process.

Put 1/4 cup of the chicken and rice mixture into each cabbage leaf. Roll, making sure all ends are folded in, and secure with toothpicks.

Place the rolls in a medium pot. Pour the tomato sauce over the rolls, and place the pot over low heat. Simmer for 30 minutes, and serve.
