Chicken In Ginger and Spring Onion Sauce

Another quick and tasty Chinese recipe to add to your portfolio. This is a sauce that appears frequently in my house when I’m entertaining guests. It’s sooo tasty, people will think you spent a lot more time making it than you really did.

Ingredients

500g of chicken, chopped
3 small bunches of spring onions, chopped (green and white parts separated)
4 atarodo/habanero, chopped
3 inch piece of ginger, minced
2 cloves of garlic, minced
2 tablespoons of oyster sauce
3 tablespoons of soy sauce (or 2 Maggi cubes)
2 tablespoons of Sesame oil

Directions

Marinate the chicken pieces in 1 tablespoon of soy sauce for 30 minutes.

Place a wok over medium heat and add the sesame oil. After 1 minute,add the white parts of the spring onions and sautee for 2 minutes.

Add the chicken pieces and stir till no longer pink.

Add all the other ingredients apart from the green part of the spring onions. Stir constantly for 5 minutes. Taste for salt.

Add 1/2 cup of water, and bring to a gentle boil. Add the spring onions, simmer for 30 seconds, then serve.
