Chicken Wings and Zucchini

There’s really no prelude to this recipe, but nobody will believe these chicken wings are “healthified”.


6 chicken wings
2 tablespoons of coconut oil
2 teaspoons of salt, divided
400g of zucchini
1 1/2 teaspoons of ground black pepper divided
1 teaspoon of ground ginger


Rub the pepper, ginger and 1 1/2 teaspoons of salt into the chicken. Refrigerate for 1 hour.

Meanwhile, use a vegetable peeler to make strips of zucchini. Toss the strips with 1/2 teaspoon of salt. Put zucchini in a sieve to drain for 45 minutes.

Pour oil into a baking dish, and spread so it covers the whole bottom of the dish. Place the chicken wings in the dish. Bake for 30 minutes (15 on each side) at 350. Don’t preheat the oven.

Place a nonstick pan over medium heat. Put the zucchini strips in the pan, add 1/2 teaspoon of black pepper and toss around for about 5 minutes.
