Colcannon
Oh Colcannon, my Colcannon, oh Colcannon, I love you sooooo!!! *singing*
I love this dish. It will be the first solid food my children eat. If I had a Top 10, it would be in the top 2, no contest!
I cannot say enough good things about this, but I only hope you will overlook the unstyled pictures, and take a leap.
I’ve made this irish potatoes, pureed cauliflower, and yams, but sweet potatoes take the cake!
Ingredients (Serves 4)
4 large sweet potatoes, cubed
1 medium head of cabbage, shredded
1 large mackerel, head removed
1 large red onion, sliced
50g of green beans, chopped
1 teaspoon of ground dry pepper
2 teaspoons of ground black pepper
1/2 teaspoon of coriander (optional)
1 double stock cube
2 teaspoons of salt
3 tablespoons of coconut oil
1/4 cup of coconut milk
Method
Boil the fish with 1/2 teaspoon of salt. Debone and flake.
Cook the potatoes with 1/2 teaspoon of salt, about 12 minutes.
Process/mash the potatoes with the milk, coriander, and black pepper.
Pour oil into a wok, place over medium-high heat. After 1 minute, add onions, cabbage and green beans, and sautee for 3 minutes.
Add the flaked fish, stir to combine. Cook for 2 minutes, add the mashed potatoes.
Add the remaining salt, dry pepper, and stock cube. Stir, and cook for 2 minutes.
