Easy Bean Sauce
This is another recipe I adapted from my mum’s kitchen. She would make her version of this sauce for yam, plantains, and potatoes. She always had cooked beans in her freezer, and we loved this sauce so much that everytime we saw the frozen beans out, one of us would ask “are you making that sauce?”
You know how some men are so macho and indifferent when it comes to food? My dad is kinda like that. Not when it comes to beans sha, and especially not with this sauce.
My mum’s version didn’t use canned beans (canned beans are soooooo cheap in Next SuperStore, so I stock well up), and she didn’t use tomatoes, only a pepper sauce. It was overwhelmingly delicious, and, as I think about it now, I’m going to make her version really soon. Fantastico!
This sauce doesn’t need a whole lot of persuasion from me for you to make it. Just look at that rich sauce on your screen. You know you want to make it. You can eat it alone as well, or with bread. Gawd! Food!!!!!!!
Kobi, my nephew, wasn’t left out of this delicious meal. I simply mashed some yam and sauce for him. I should have taken pictures of his contented face and big tummy. He loved it. Score for me!
Easy Bean Sauce
This serves 4
- 1 can of beans (any beans will do, I used kidney beans). You can use 2 cups of your own cooked beans
- 2 tablespoons of olive oil
- 1 large red onion, sliced
- 1 can of peeled plum tomatoes (also really cheap at Next) or 5 large tomatoes(chop them)
- 1 1/2 teaspoon of salt
- 3 atarodo/scotch bonnet, chopped
Rinse and drain the beans if using canned beans. Set aside.
Heat oil in a wok over medium heat for 30 seconds. Add onions.
Sauteé onions for 2 minutes, then add tomatoes and atarodo. Cook for 4 minutes, using wooden spoon to smash the tomatoes.
Add 3/4 cup of water and salt. Mix and cook for 1 minute.
If using canned beans, add them now, simmer for 5 minutes, using a wooden spoon to mash some of the beans.
If using your own cooked beans, add the beans 2 minutes before taking the sauce off the heat. Mash some of the beans as well.
