Ginger and Lemon Vegetable Stirfry

I would like to introduce my 2nd favourite vegetable side dish. My first is a simple coconut coleslaw which I will be sharing with you later. You know those times when you just know that if you are left alone with that pot of delicious jollof rice you just cooked, you’ll finish it? Never fear, this will help fill part of your tummy so you don’t over grub (you just gauge…lol)

Honestly, this is so tasty, and so filling, if you’re not careful, you won’t be able to eat the jollof rice. To make this extra kid-friendly, add a teaspoon of honey with the lemon juice. Picky kids won’t be able to stop themselves from wolfing this down. It’s THAT good!

The lemon lends the vegetables a slight (very slight) tang, and everything is gingery and spicy. The carrots come out very sweet and tender too. I could go on waxing lyrical about this dish but, by the time you finish reading the post, you’ll be too tired to get up and make your own (and that would defeat the whole purpose, wouldn’t it?).

Making Ginger and lemon Vegetable Stirfry

You can make this a dish on its own, just throw in some chopped cooked meat, or some shrimp (I LOOOOOOOOVE SHRIMP, by the way) and chow down to your heart’s content.

A side is always a good idea, always a way to help us eat more veggies than we already do. make this, and enjoy!

Ginger and lemon Vegetable Stirfry Recipe

This serves 4

Ingredients

  • 3 large carrots, cut diagonally
  • 100g of green beans, cut
  • 1 large green bell pepper, sliced
  • Juice of 1 lemon
  • 2 inch piece of garlic, minced
  • 2 atarodo/scotch bonnet, chopped
  • 1 large red onion, sliced
  • 2 tablespoons of soy sauce
  • 1 teaspoon of dry basil
  • 1-2 teaspoons of honey (optional)
  • 1 tablespoon of olive oil

Instructions

Heat oil in a wok over medium heat for 20 seconds. Add ginger and onions. Sautee for 2 minutes.

Add atarodo, green pepper, carrots, and green beans, and sautee for 3 minutes.

Add soy sauce, lemon juice, honey ,and basil, and stir. Leave to simmer for 2 minutes.

Serve and enjoy!

No, my former neighbor used to make ice cream in a bowl then, some do it without ice cream maker, i need the recipe and method pls. Thanks n God bless.
