Meat and Potatoes
This is quick, easy, and delicious. Perfect for lunch or dinner in a hurry.
2 large sweet potatoes, peeled and chopped
400g smoked chicken (feel free to use raw, and any kind of meat), cut into strips
Stalk of one leek, or white part of 3 spring onions, chopped
1 small red onion, chopped
4 atarodo, chopped
1 clove of garlic, chopped
1 teaspoon of white pepper
1 teaspoon of black pepper
1 teaspoon of ground ginger
2 tablespoons of coconut oil
1 teaspoon of salt
I small stock cube
Boil the potatoes with the salt till cooked but firm, about 10 minutes
Pour oil in a wok over medium heat. Add the onions, atarodo, leek, and garlic. Sauteé for 2 minutes.
Add the meat, stir fry for 2 minutes (if using raw, for 5 minutes)
Add the potatoes, black pepper, white pepper, stock cube, and ginger. Stir to combine. Pour in a cup of water, cover and cook for 7 minutes.
There’ll be a little sauce to serve with.
