Potato and Carrot Pottage

This recipe is for my nephew, Koby. Kids are not left out of eating healthy, and their food doesn’t have to be too bland. He’s 1 year and 2 months old, so he’s eating some solids now (even though they aren’t part of his regular meals yet). I tasted this after making it, and I felt bad that I didn’t make more for HACE and I. The only thing I would add if this was for adults would be more salt and pepper. Otherwise, it’s perfect!

Potatoes and carrots are okay for babies 7 months and above (although, I would still be doing exclusive breastfeeding-if I could-at that age). For babies younger than Koby, puree the food after cooking. And try not to eat half of the food as I did  before baby does.  To make it sweeter, use sweet potatoes instead.

Potato and Carrot Pottage

Ingredients

  • 1 large irish potato, cubed
  • 1 medium carrot, cubed
  • 1/2 cup of amaranth leaves, sliced
  • 1/2 of a small onion, sliced
  • 1 1/2 cup of water (I used chicken stock, and, if you do, leave out the salt)
  • Pinch of salt
  • 1 teaspoon of melted unsalted butter or coconut oil

Instructions

Pour water or chicken stock in a small pot. Add carrots and salt (if using water). Place on medium heat, and cook for 4 minutes.

Add potatoes and onions. Cook till potatoes are very soft.

Add butter and amaranth leaves. stir and cook for 1 minute.

Serve (mash for younger babies, or if your toddler isn’t eating solids yet).

    I love malt vinegar on grilled fish. Try it please. It’s also good on sweet potato fries. Yum! Don’t like the taste in recipe experiments so far. When I come up with a good one, I’ll let you know
