Watermelon Ginger Lemonade

When my siblings and I were younger, my mum used to have to employ ingenious ways to get us to eat some fruits and vegetables. I loved corn, pawpaw, carrots, coconuts, apples, and peas. I could do without all other fruits and vegetables. The woman had to coat and cover almost everything in sugar or cheese (I’m sure we gave her hell!)

I think we loved peas, apples and carrots because she mashed them and fed to us as first foods. When she started introducing others, we weren’t having any of it (at least, I wasn’t). Anyway, one of the things I remember was her getting us to eat watermelons. She would make a syrup of some sort and pour over the cubed watermelons, and we would eat our hearts out. She still does it, and only recently, I discovered it was a honey, lemon and ginger mix. It was delicious abeg!

This recipe is inspired by that syrup. My watermelon was really sweet, so I skipped the sweetener. It’s cold, fresh, sweet, spicy, and tangy all at the same time. You’ll love it!

Watermelon Ginger Lemonade

This serves 4

  • 1 small watermelon, cubed
  • Juice from 3 small lemons
  • 1 inch piece of ginger, peeled
  • 1 tablespoon of honey (optional)
  • 1 cup of cold water

Place all ingredients in a blender (if using a juicer, juice the watermelon and ginger, then add other ingredients). Blend well, then pass through a sieve.

Refrigerate and enjoy!

Hi, my name is Chidinma. I’ve been happily married for 4+ years (actually almost 6 years now), and my husband and I have been trying to have our own children for almost all the time we’ve been married, with no success…yet. We haven’t lost hope (far from it), and we believe it will happen very soon.

Hi Ify. It’s allowed. I used lemons because they’re not as sour and as sharp as limes. If you like limes, that’s fine.
