Tilapia and Easy Mushroom Sauce

Hi everyone, Season’s greetings! Please permit me to make very short posts till I’m much better.

This is an extremely tasty way to enjoy tilapia, or any white fish for that matter. The sauce will also work well with chicken breasts (hmmm, food!)

Ingredients

1 Tilapia, gutted and cleaned, head removed
3 atarodo (habanero), blended with 1/4 cup of water
3 cloves of garlic, chopped
1 inch piece of ginger, chopped
1 teaspoon of onion powder
1 teaspoon of coriander
1/2 teaspoon of dried basil
1 double stock cube, divided
1 tablespoon of unsalted butter
1 cup of sliced button mushrooms
1/2 teaspoon of salt

Method

Preheat oven to 350.

Make slits on each side of the fish, this helps the pepper sauce permeate more.

Mix the blended atarodo, onion powder, salt, basil, 1 stock cube, and coriander together.

Pour the pepper sauce over the fish in a baking tray. Bake for 25 minutes, or till as well done as you like.

In a fry pan over medium heat, melt butter. Add garlic, ginger, and mushrooms.

Add the remaining stock cube, sauteé for 3 minutes.

Pour over baked fish and enjoy!
